10-Apple French Toast Roll-Ups:

2 apples, medium
1 teaspoon (5 mL) lemon juice
12 teaspoon (1.55g) cinnamon

160g flour
1 tablespoon (15g) sugar + 1/2 teaspoon (2g) salt
1 1/2 teaspoons (6 grams) baking powder
1/2 teaspoon (2 grams) cinnamon + 1/4 teaspoon (1 gram) nutmeg
1 egg
2 tablespoons (28g) vegetable oil
240ml milk
1 cup stripped and diced apple (around 1 apple)
Pour 1/4 cupful of batter onto the pan.

5-Shakshuka: Eggs in Tomato Sauce:

1 large onion
Heat a 12 inch (30 cm) frying pan and add 1 tablespoon of olive oil.
Cook for around 5 minutes until the onion starts to mellow.

3-Blueberry Ricotta Pancakes:

2 eggs
Separate the whites from the yolks.
30g sugar
120g buttermilk
1 teaspoon (5 grams) vanilla extract
Ricotta cheese (240g)
125g of all-purpose flour
1/2 teaspoon (3 g) salt
1 1/2 teaspoons (6 grams) baking powder
Whisk until no lumps remain.
Zest from a lemon
whip until soft peaks form.
gently fold into the pancake mixture.
Heat the pan and lightly grease it with butter.
Add about 1/4 cup of batter.
Add blueberries on top.

freshly ground black pepper.
30g all-purpose flour + green onion
2 eggs, beaten
stir to combine
Heat about 50g of oil over medium heat.
It takes approximately two tablespoons.

Add 2 tbsp (28g) of butter to the hot pan and return it to the oven for 1 minute.
Bake for 15–17 minutes, until puffed and golden brown.
